Come join us to welcome Oakland’s Blue Chair Fruit to Bull Valley! In this 4-hour class, Rachel Saunders, Blue Chair Fruit’s owner and the author of The Blue Chair Jam Cookbook, takes you through the jam-making process from start to finish. Using seasonal local fruit, we will cook four different jams, including two multi-fruit jams. Our focus will be on identifying the physical properties of different fruits and understanding how these properties affect both the cooking process and the end result. We will examine key topics such as the role of sugar, the importance of lemon juice and how to add it, the stages of cooking, and how to test accurately for doneness. Our class will
start with a jam tasting and discussion, then proceed to the cooking process. After class, we will gather around the table for a delicious family-style dinner from Bull Valley Roadhouse’s kitchen! You will receive four mini jars of jam to take home.
